Nutritional Analysis

To ensure accurate labeling and packaging, nutritional information such as sugars, salt, and fat content must undergo confirmation and validation through analytical techniques.

Nutrient Quantification

We measure all nutrients comprising the nutritional information using methods adapted for each food matrix, including:

  • Proteins, fats, carbohydrates, energy value, dietary fiber, sugars, saturated fats, salt (sodium)
  • Fibers (beta-fructosans, beta-glucans, GOS, dietary fiber)
  • Organic acids (citric, acetic, lactic, tartaric, etc.)
  • Alcohol (ethanol)
  • Other nutrients: cholesterol, starch, polyols (sorbitol, lactitol, isomalt, erythritol, etc.), monounsaturated and polyunsaturated fats (omega 3, omega 6)

Composition Testing & Quality Indicators

Mérieux NutriSciences assesses the composition and quality of each product considering the nature of the product and the proper quality indicators, performing ,among others, tests with the following parameters:

  • pH
  • Titratable acidity
  • Peroxide value
  • Free fatty acids (FFA)
